One of Scotland's native gingers the red squirrel is an iconic sight in the highland pine forests. The nuttiness of the amaretto represents the squirrels love of nuts and the champagne adds a classy twist to this cocktail as well as creating a wonderful red hue just like the red squirrel. Although we don't garnish this one as standard grating nutmeg over to finish can add to the spice, or an orange twist to add a zesty fruity note.
