Blueberry Beach:

As anyone who has visited will know, Lewis and Harris are Scotland's very own Carribbean! After visiting one summer and being blown away by the sheer blueness of the water, a tropical cocktail seemed only right. Adding some Scottish highland blaeberries as a garnish gives a nice tartness and they can even be muddled if you want to evolve the cocktail. The rosemary acts as a lone Scots pine tree and adds lovely aromatics to the cocktail. Harris Gin feels right at home in this one as will many of Scotland's island gins. Lemonade for the sweeter style and soda if you prefer a drier cocktail.
