A play on the classic tequila sunrise and the famous Scottish song and musical, ‘Sunshine on Leith’. Being on the east coast, Leith has wonderful sunrises and the docks at Leith have a rich maritime history with rum long having been brought in by the sailors. A little slice of sunshine from our often rainy country! Dark Matter is a particularly well spiced rum but feel free to experiment with others to your taste.
